Product Description
Chitosan is an off-white powder that is flavorless, semi-transparent, and amorphous. It is soluble in acidic conditions but remains insoluble in alkaline solutions, water, and most ordinary organic solvents. Chitosan decomposes at a temperature of 185°C.
Commercially, it is produced through the deacetylation of chitin, a process that involves treating crab and shrimp shells with sodium hydroxide. Chitosan is known for its unique properties as a fat-absorbing dietary fiber.
