Polydextrose is produced from "corn starch",Polydextrose is a kind of high-quality water-soluble dietary fiber. After eating, it is beneficial to keep the intestine unobstructed, increase satiety, and lower blood sugar levels after meals.Different with other insoluble dietary fiber, polydextrose has mortifications: Polydextrose not only has the functions of loosening the bowels to relieve constipation, lowering the risk of intestinal cancer, but also can significantly lower blood cholesterol by eliminating cholic acid, and significantly lower the blood glucose level after meal. With its properties of low calorie, stability and high tolerability, polydextrose can be widely used in various food, especially functional food with low calorie and high fiber.
Solubility: Polydextrose is soluble in water(80% at 25 ℃)
Stability: under the naked condition at 25 ℃,45 ℃,60 ℃ can be stored over 90 days. With good stability at about 200 ℃, without reaction with acid and alkali.
Viscosity: under the same concentration, polydextrose’s viscosity is higher than saccharose and sobitol’s concentration. The higher temperature, the lower viscosity, which is similar to saccharose’s concentration.
Moisture retention: when the surrounding relative temperature is high, solid polydextrose can sufficiently absorb water. Polydextrose can be used as food moisturizer to control the change of temperature. Taking baking food as example, polydextrose can delay water evaporation, thus prevent product from losing flavor, and maintain or prolong product’s shelf-life.
Flavor: polydextrose has no sweet flavor. Type A has little bitter flavor, which become dilute or disappear after modified. Polydextrose with high concentration may have unpleasant flavor, but it can be eliminated by reducing dosage, adding seasoner or flavor modifier.
Regulate intestinal canal: proved by research, polydextrose can improve defecation without the bad effect of abdominal distension and diarrhea. It is beneficial to increase beneficial bacterium’s number in intestinal canal, decrease harmful germ’s number, lower excrement’s pH value. It can reduce small intestine’s absorption to glucose; ferment in large intestine after intake to produce short-chain fatty acid like butyric, isobutyric, acetate acid.
